Here comes summer and pool parties and bbq's
Well how could you let summer go without sending those fantastic summer greeting cards, summer is so much fun we all love the warmth, the lazy hazy days, lemonade and strawberries, not forgetting tennis
I will be highlighting different artists with the summer theme and these will change often so I hope you keep nipping in.
Wimbledon, Father's Day, Summer Birthdays and Pool Parties, what a fun packed few months before we get the winter blues, so why not show everyone how you feel, with unique made greetings and art from individual artists.... not the usual commercial cards you can get daily with thousands of others using the same cards, these are unique, made by real people every day, no generic stuff here.

The summer BBQ

Yes Gents we know you love and master the BBQ
It seems that it's the men who adore cooking on the BBQ which is nice gives us ladies a break (well those who cook all the time) every summer all over the place there are beach BBQ's, the back garden BBQ where you sing as loud as you can making sure all your neighbours who you have not invited hear how much fun they are missing :D it's a time when communities get together to enjoy food, chat and well most of the time a tipple or twelve, men adorn the apron and man the grill with a look of determination and pride, each sausage black on the outside, pretty pink on the inside.

Sticky Chicken Drumsticks

Lets give the plain old BBQ some zing.
Delicious chicken drumsticks with a sticky soy glaze that can be cooked on the grill or the barbie - weather permitting.
Method
1. Make 3 slashes on each of the drumsticks. Mix together the soy, honey, oil, tomato purée and mustard. Pour this mixture over the chicken and coat thoroughly. Leave to marinate for 30 mins at room temperature or overnight in the fridge. Heat oven to 200C/fan 180C/gas 6.
2. Tip the chicken into a shallow roasting tray and cook for 35 mins, turning occasionally, until the chicken is tender and glistening with the marinade.
Simple easy yummy!

Jack Daniel's rich honey teriyaki ancho glazed salmon

 I go to my local TGI Friday, and it's heavenly, only for special occasions and their Jack Daniel's Sauce is to die for, I can't quite replicate the full taste, but I put that down to the enjoyment of actually being out and being pampered with food and outstanding service, if you pass one, nip in tase their prawns (and i never ever eat sea food) these are just mouthwatering. http://www.tgifridays.co.uk/ or http://www.tgifridays.com/home/welcome.aspx.
Any way here is the recipe for Jack Daniel's rich honey teriyaki ancho glazed salmon for your BBQ delight.
Ingredients
4 Salmon steaks about 180grams each
Jack Daniel's Rich Honey BBQ sauce
Ground ancho chilli powder
Marinade
473 ml Jack Daniel's Rich Honey BBQ sauce
15 ml Dijon mustard
5 ml ancho chilli powder
Method
Wash the salmon steaks under cold water and pat dry with a paper towel. Remove any remaining bones from the salmon.
Mix both ingredients in a medium sized bowl. For a sweeter glaze add more honey sauce. For a hotter glaze add more ancho chilli sauce.
Pre-heat the grill for direct cooking. Rub a small amount of olive on the steaks and season slightly with salt and pepper.
Place skin side down on the grill and spoon the glaze over the salmon. Grill for between 12 to 15 minutes.
Check after about 6 minutes and add more glaze.
If the skin begins to burn you can gently lift the salmon and slide aluminium foil under it. When done the salmon should be firm to the touch.
Remove from the grill and serve.
Low Carb BBQ Marinade
As my diet progresses I search for tasty things to eat, its' not easy
 Memphis (Style) Dry Rub BBQ
This is good for:
Ribs
Chops
Chicken
and has far lower carbs than bbq sauce.
1. Tbsp Paprika
2. tsp Chilly powder
3. 3/4 tsp salt
4. 1/4 tsp dry mustard
5. 1/4 tsp garlic powder
6. 1/8 tsp freshly ground black pepper.
Mix all the ingredients together and store the mixture in a salt shaker, sprinkle on both sides of whatever meat you're cooking and grill.
This recipe serves 3 and if the 3 of you eat it, then you will each get 2grams of carbohydrate and 1 gram of fiber that makes one gram of usable carbs and no protien.
Plus it's yummy.

Low Carb Chocolate Chip Cookies

I am so glad I found this recipe sometimes you just need that little tasty treat.
225g butter, at room temperature
180g splenda
1 1/2 tsp of black treacle
2 eggs
100g ground almonds
100g vanilla-flavoured whey protein powder
30g oat bran
1tsp baking soda
1tsp salt
100g chopped walnuts or pecans
350g sugar-free chocolate chips (yes it is possible)
If you can't get the chocolate chips, you need to make some from sugar-free chocolate bars. Break 7-8 of the bars which are around 30g each, into three or four pieces, each and place them in the food processor, the S blade is the best for this. Pulse the food processor until your chocolate bars are in pieces about the same size as commercial chocolate morsels and set them aside until you need them.
Now is a good time while you have that processor out to grind up the almonds
1. Preheat the oven to 190 degrees ~C~/Gas 5
2. Use an electric mixer to beat the butter, splenda and treacle until creamy and well blended, add the eggs, one at a time and beat well after each addition.
3. In a separate bowl, stir together the ground almonds, protein powder, oat bran, baking soda and salt. Add this mixture , about 1/2 cupat a time, to the splender mixture, beating well after each 1/2 cup addition, and until it's all beaten in. Stir in the nuts and chocolate chips.
4. Spray a baking tray with nonstick cooking spray and drop the dough in rounded tablespoons on to it. These cookies will not spread and flatten as much as standard chocolate chip cookies, so if you want them flat, flatten them a bit now.
5. Bake for 10 mins, or until golden. Cool on baking sheets for a couple of mins, then remove to wire racks to cool completely.
each cookie will have 3 grams of arbohydrate, and trace of fiber and 5 grams of protein.
